Chef Liu’s Spicy Fried Chicken

Chef Liu's Famous Fried ChickenBackground: For those who know me, I am a fried chicken aficionado. It is one of my favorite foods in the entire world. I was in the mood to eat some fried chicken one day, when I thought to myself “why don’t I try making my own chicken?” After doing a little research, I came up with this incredible recipe.

Ingredients:

  • 1/3 cup of garlic salt (this is to wash and marinate the chicken in)
  • large packet of chicken (approximately 12~16 pieces)
  • 1 quart of peanut oil (for frying)

For dipping mixture prior to flouring:

  • 4 eggs (for dipping prior to flouring)
  • 2 tablespoons of salt (for dipping prior to flouring)
  • 2 tablespoons of black pepper (for dipping prior to flouring)
  • 2 tablespoons of paprika (for dipping prior to flouring)
  • 2 tablespoons of garlic powder (for dipping prior to flouring)

For flouring chicken:

  • 1 cup of corn starch (for dry flour mix)
  • 4 cups of flour (for dry flour mix)
  • 4 tablespoons of garlic powder (for dry flour mix)
  • 4 tablespoons of paprika (for dry flour mix)
  • 3 to 4 tablespoons of cayenne pepper (for dry flour mix)
  • 4 tablespoons of black pepper (for dry flour mix)

Directions:

Prepping the chicken:

  1. Wash chicken in a large bowl using cold water.
  2. Add 1/3 cup of garlic salt into the chicken and submerse with water. This will serve to further wash the chicken, as well as provide the salty flavor for the chicken. Let the chicken sit in this mixture for approximately1 hour in the fridge.
  3. In a separate bowl whisk the eggs and combine with black pepper, cayenne pepper, paprika, garlic powder. This is for the egg wash dipping mixture.
  4. In a separate bowl, combine corn starch, flour, black pepper, cayenne pepper, paprika, garlic powder and thoroughly sift so that the contents are mixed.
  5. Drain water from chicken and dip into egg mixture and put in the flour mixture. Churn the chicken 8 times and then place on a wired rack. Repeat this for all of the chicken.
  6. Heat oil in fryer to 350 degrees and cook chicken for approximately 15 minutes.

hey dude,

peanut oil is good n’ all, but if you want some REAL southern flava in your chicken you gotta cook it with shortening. Crisco will do in a pinch, lard is better. :-)

cook it in a cast iron skillet if you got one. trust me, it’ll make a world of difference.
